Lai Heng Handmade Teochew Kueh 莱兴手工潮州粿
The stall specializes in handmade Teochew kueh and well known for their rice kueh, soon kueh and Chinese chives kueh. All the kueh are freshly made daily at the stall, and each of the kueh is handmade, a time consuming process in the modern day but maybe it is also the human touch that makes the kueh taste better than those made by the machines.
“Pinky” rice kueh
A good kueh depends much on two important factors, how well the seasoning of the ingredients that go into the filling and the quality of the kueh skin. The rice kueh from Lai Heng Handmade Teochew kueh is flavourful though the ingredients are simply made up of rice, peanut and bit of dried shrimp, no mushroom or coriander compared to some others.
Soon Kueh
The soon kueh skin is thin and chewy, we love the slight charred skin after pan frying, the slight crispiness somehow enhance the tastefulness of the soon kueh compared to the steamed version. Filling just simply consists of turnip, dried shrimp and insignificant of black fungus, however, it does not compromise the flavour, overall we can taste the sweetness and crunchiness of the turnip, a nice snack for the day.
Chinese Chives kueh (Ku Chai kueh)
This is our favorite kueh, there are two types of chives in the market, however, only one of the particular species able to bring you the right and good flavour of the kueh. However, many of the ku chai kueh are ignorance to notice the difference and result a big disappointment of the kueh. Fortunately, Lai Heng Handmade Teochew Kueh has the right chives for the filling, with the good seasoning; it created one of the very good Chives kueh in the market.
