Kovan Rojak 高文罗惹
Rojak is a traditional Malay fruit salad, over the time the dish has evolved and became popular among all Singaporean of all races. This made up of purely vegetable and fruits dish has the combination of sweet, sour and a little spice, it is good to perk up your appetite before a meal or served as a dessert after a good main meal.
Rojak’s main ingredient cannot do away the traditional fruits and vegetables, the pineapple, cucumber, turnip, bean sprout, lemongrass, you tiau, tau pok, apples and occasionally the mango and others fruits. What determines a good or bad rojak is not so much with the types of fruits used, of course, freshness of the ingredients is important but the key influential factor is very much relied on the rojak sauce. The sauce usually consists of shrimp paste (belacan), oyster sauce, sugar, chili, tamarind paste, soy sauce and lime juice, by sprinkling the additional peanut powder and sesame seeds, the combination with the fruits could be a real sumptuous salad and appetizer.
The fruits used by the Kovan rojak were fresh, you tiau and tau pok were nicely roasted to give a crispy finishing, the rojak sauce was very rich and robust that blended well with the ingredients. Though, not the best in its class but we can say Kovan Rojak is definitely above the average standard and worth the try.
