Hong Sheng has been operating from a coffeeshop stall serving authentic Cantonese style zi char in Toa Payoh for more than 30 years. The stall runs from 5pm to 10.30pm daily, merely five hours a day. During the operating hours, all other stalls in the coffeeshop will cease operation and Hong Seng has the exclusive use of the whole coffeeshop for their business, so good the business? Yes, most of the tables are usually occupied from 6pm and the waiting time can drag for an hour for the food.  The popularity is evident.

The pork rib was tender and the sauce was well impregnated into the meat. Seasoning may not be that fantastic but overall still pleasantly good.

Hor Fun is their signature dish and we definitely want to review it.

Take away version is packed in Opeh leaf but dine in will not have the privilege. A plate of $8 Hor Fun for a share of three persons is actually quite reasonable. The Hor Fun was served with fresh prawn, cuttlefish and pig tripe. We can taste the charred flavour (Wok Hei) of the Hor Fun which was important for a good Hor Fun. However, we found the noodle was too salty perhaps from the overdosing of soy sauce when frying the Hor Fun. On the contrary, the gravy was a tad of sweetness and can’t blend really well with the Hor Fun. Hong Sheng Hor Fun is raved to be their signature dish but we are afraid it could be over-hyped in our opinion. Honestly speaking, we don’t find it is too speculative after all, or perhaps we were unlucky enough given the inferior culinary work at the wrong time.

The prawn roll was packed with quality ingredients and well seasoning, not crammed with the plain flour just to fill the volume; overall, it was flavourful and tasty.

Prawn Paste Chicken (虾酱鸡)

One of the better one we have tried so far, the chicken wings were cut into smaller pieces, dipped into the rich prawn paste before deep fried to golden brown, you can smell the fragrance of the prawn paste and we love the slight crispiness of the crust and the delectable taste in every chuck of the chicken.

Overall, the cze char from Hong Sheng was commendable from the used of fresh ingredients, tasty food and very reasonable price, a dinner for four of us costs merely a $40 bill could well offset the minor imperfection in some of the dishes.  May be another reason for their overwhelming crowd.
