Hai Chang Fish Head Steamboat @ Tampines
It has been years since we last patronised Hai Chang Fish Head Steamboat and perhaps time to do a followup check.
The usual burning of the charcoal in the pit, aluminum steamboat chimney vessel were nicely stacked up on the table, ready to be loaded with the burning charcoal from the makeshift pit, we can felt the heat even sitting a distance away, uncomfortable to the already sweltering heat recorded on the mercury barometer.
Operating only after dark, Hai Chang seems to hog the limelight at the food centre with the busy activities going on around the stall.
Steamboat comes with the choice of Pomfret $30/$40/$60, Red Grouper $25/$35/$45, Red Snapper $18/$23/$28.
We ordered the medium size Red Snapper.
The portion of the fish from Hai Chang was small and likewise other ingredients, you will find few slices of cabbage, few pieces of taro and bits of seaweed floating pathetically in the broth, though the fish were fresh but mostly bone and could be a disappointment to some expecting chucks of fish meat.
The broth is the soul of the steamboat but we are not too impressed with the seasoning, it was ordinary and not able to trigger some excitement in our tastebuds.
Prawn with salted egg yolk $18/$22/$30
The steamboat was ordinary and we grew more despondent with the side orders, all the side orders we tried not able to create any spark on our aspiration of a good food, it was either missing the tanginess or quality that we are looking for.

Hai Chang Fish Head Steamboat Verdict :
Hai Chang Fish Head Steamboat has a lot more work to do to beef up the standard for a good steamboat, be it the steamboat or the side orders, we would expect more zest to go into the food.
