The big signboard indicates Green Sky Fried Kway Teow, however, the note that prominently placed in front of the stall telling the world their signature dish is actually the oyster omelette, we had no hesitation and promptly changed our choice for their signature dish. Voted for the top 10 best oyster omelette in Singapore, we just can’t give it a miss.

We have eaten many oyster omelette before and the style were all very much similar and adhering to the traditional way of gooey texture with eggs, flour, ladled of oil and of course, the oyster. If fact, oyster has never to our liking as we don’t really know how to appreciate the little tiny grey creature, it is usually the rest of everything in the plate except the oysters that we go for. Might as well opt for fried omelette without oyster? You may wonder. However, pure fried omelette without the oyster just does not taste right; the missing strokes of the oyster flavor could make a notable concession to the overall judiciousness of the taste. Perception? That is how we feel.

When the oyster omelette was served, we were kind of surprise, the whole plate of the oyster omelette was encrusted with eggs, not the usual starchy floured and miserable egg coating cost reduction version. The omelette texture was also a vast difference from the traditional mushy and gluey type. Green Sky oyster omelette was cooked to the point that you got plenty of delightful crispy omelette, every mouthful was pleasantly stunned by the unraveled intensity of the eggy flavor. Besides the nice crispiness, the omelette was far less oily compared to those gooey types we have tried so far. The tangy of chili sauce was a medley of sweet and sour and went well with the oyster omelette as well.

We ordered additional fried carrot cake but were not too impressive as what we can get from the oyster omelette, fairly ordinary and nothing to shout it out.

Overall, Green Sky oyster omelette was truly lived up the name to be one of the best 10 oyster omelette in Singapore. Freak out by the cholesterol? But it is a dish just worth dying for.
