We love hor fun especially those with some wok-charred one, the wok smell (wok hei) flavour is one of the most important and distinctive characters of a good Hor Fun must have, some Hor Fun may be generous in the ingredients to draw the customer’s attention but regardless what are the ingredients used, somehow, Hor Fun without the charred smell simply don’t be able to accentuate the goodness of the noodles.

Most of the zi char stalls or even restaurants that we have tasted the Hor Fun fell short of our expectations greatly; nowadays, the Hor Fun is very much lack of the lustre compared to the old day. Of course, it is not practical to produce the smoky charred smell using the fire wood or charcoal stove to fry the Hor Fun in the modern day, and it is becoming a big challenge for many chefs to attain the standard, so far, only a handful of skillful chefs able to reproduce the old good taste into a subtle dish.

Changi Lorong 108 Fei Lao Seafood is a Zi Char stall located in a coffee shop at Bedok, the stall is recommended by one of our friends who stay nearby. We were there during dinner time and saw many of the tables ordering the Hor Fun include those queuing up to pack the food back home.  We decided to pack the Hor Fun instead of eating in for a simple reason, if you eat-in, you will serve the Hor Fun in a plate, however, if you packed home, the Hor Fun will be wrapped using Opeh leaf for a minimum ten dollars pack instead in a Styrofoam or plastic container, this is so rare now able to eat the Hor Fun with Opeh leaf and how can we miss it since there is a belief the Opeh leaf will enhance the flavour to the food wrapped in it.

Fei Lao never failed us, thought the price is a little steep but we bet you will indulge in the heavenly flavour of the oldies Hor Fun, with the perfect charred Smoky smell and the luxurious used of fresh ingredients like king prawns and sea cucumbers, the chef has created a fantastic taste from the evidence of tremendous depth in its culinary skills.
