We’ve been on a mission to look for good kway chap and based on a recommendation, we headed to Toa Payoh Lorong 4 to verify the claim. The stall operates from 5pm till midnight, as opposed to the usual morning operating hours for this traditional “breakfast” dish. We went there on a week night and there were about eight people ahead of us in the queue, not exceptionally long, we thought, but it turned out to be a whopping 20 plus minutes wait. Obviously the serving pace was a bit slow.

We ordered some innards, fish cake, tau pok, tau kwa and salted vegetable. We did not opt for the braised pork when we peered at the display, as we saw that the ratio of fat to lean meat was way too high and felt too guilty about it. So was it worth the queuing time?

Well, the bowl of “kway” was too soft and slightly overcooked, and we could hardly find a perfect sheet of rice noodle in the kway as it had mostly broken into smaller pieces. The kway lacked chewiness as well, something we typically look out for from a good bowl of kway chap. Luckily, the gravy doused over the bowl of kway was flavorful with the help from the generous sprinkling of shallot and garlic oil.

When we tried the braised items, the innards were again slightly overcooked, it lacked juiciness and flavour. Our final hope shattered into pieces when we tried the fish cake and tau kwa, both had a weird taste at first bite, a taste usually associated with the prolonged exposure of the food. The weird smell could only be masked by dipping into the chilli sauce. Salted vegetable was again too soft and too bland from excessive cooking. Tau pok was also way too hard. This is turning out to be a negative review – but honestly, it’s definitely not our intention to find fault but to share our frank opinion as a food blogger.

There could be other reasons to explain the queue which we cannot comprehend. In our opinion, there is certainly plenty of room for improvement for the kway chap. Of course, we accept different opinions and at times we could be wrong or misjudge! Please feel free to let us know and we are more than willing to re-evaluate our verdict.
