Ah Tan Crispy Chicken @ Yishun Park Hawker Centre – salivating wings from a young hawker
“If You like to eat fried chicken wings but can’t find one that you like, so how?” Wife asked.
“Go and invent one recipe that I like lor.” I replied.
“Ok, let’s go and try Ah Tan Crispy Chicken Wings at Yishun Park Hawker Centre, he shared the same sentiment as you.” When come to looking for good food, wife has every reason to justify the trip.
Managed by a young hawker, Ah Tan Crispy Chicken Wings is a brain child of a brother-sister duo decided to quit the corporate life and ventured into the hawker life, reason – the search of the ideal fried chicken that had not been successful and led to the idea of creating their beloved wings – the popular Ah Tan wings.
Ah Tan Crispy Chicken Hai Cheong Gai wings or the shrimp paste chicken, consisting of fried chicken wings in a batter with fermented shrimp paste, followed by deep frying to attain a golden brown crispy coating with a nice shrimp flavour.
Started to make a name by launching their chicken wings at different events, attracting the attention of the public with its hai cheong gai wings, the siblings decided time is right to find a permanent roof for their wings and settled down at its current location – Yishun Park Hawker Centre.
Besides the signature shrimp paste wings, Ah Tan wings introduced the East and Western menu that served with rice or salad.
The fermented shrimp paste coated wings were crispy and flavourful, shrimp flavour was not overly pungent that could leave an unpleasant fishiness lingered in the tongue. While the coating was crispy, the inner remains juicy though the seasoning may not fully permeate deep enough into the meat and made the flavour appeared less distinctive, perhaps a little longer in the marinating time could help here. Ah Tan Crispy Chicken is a creation of a young hawkerpreneurs, it is an encouraging sign to see them take on the challenge and help to preserve our street food culture – an area which is diminishing rapidly especially with the loss of older hawker generations.
