Unable to differentiate a product in the competitive market place is one of the key weaknesses in many food businesses here. Many try to duplicate successful business models but in the end only find themselves being swallowed by the quicksand: bubble tea and bean curd pudding are just some of the examples.

Chef Gwern, founder of A Noodle Story, was fully aware of the challenges and the need to compete and survive, as selling ramen is a daunting task with so many good ramen shops around. So we give him kudos for innovating and not simply being a copycat – and the result is his very own Singaporean-style ramen.

Consisting of springy noodles tossed in a special aromatic dressing accompanied with Hong Kong-style wontons, soy sauce hot spring egg, tender char siew and a crispy potato-wrapped prawn, garnished with freshly sliced scallions and red pepper, it is a beautifully-crafted masterpiece. The very first impression is already a winning one.

Seeing us spend time snapping photos of the bowl of noodles with our DSLR camera, Chef Gwern, ever the inveterate chef, reminded us that the mee has to be eaten fresh before it clumps up and loses its chewiness. The noodle was slightly thinner than the common yellow mee kia, and is cooked to a perfect texture – when blended with the sauce, it produced a mouth-watering dish.

The Char Siew here were really slices of thin pork belly seasoned to achieve a nice flavour. The crispy potato-wrapped prawn was aesthetically pleasing but did not taste extraordinary, and we could find nothing to fault about the steamed dumplings.

Our verdict: A Noodle Story’s innovation in creating a uniquely Singapore version of ramen was pretty much well received by all of us with its pocket friendly value-for-money price and delicious taste. We hope that A Noodle Story will earn its place in Singapore’s food heritage – meanwhile, it’s still a story well worth sharing!
