From TV to newspapers and magazine, there is no shortage of coverage on 545 Whampoa Prawn Noodles stall in all major media outlets, simply because it’s manned by Ruifang – a university graduate! Having inherited the prawn noodle stall from her parents, this is a rare phenomenon in our local hawker scene: a young university graduate giving up the comfort of an office, in exchange for a hot and humid food centre cooking prawn mee.
In order to open for business at 6.30am, the preparation work starts as early as 3am – a time when most of us are still sleeping soundly. Working 13 to 14 hours a day is the norm as a hawker; hard labour that’s definitely not easy for anyone.
But in case you doubt her skills, RuiFang evidently knows stuff. Visit her stall and you can witness how skillful she is in whipping up bowl after bowl of prawn mee.
545 Whampoa Prawn Noodles does not offer bigger prawns – instead, she serves up traditional prawn mee with small shrimp and pork slices. So none of those $20 a bowl prawn mee you can find at other prawn mee stalls. We ordered both the soup version and dry version for a comparison.
Dry version prawn mee $4.0
Yellow noodle mixed with white bee hoon, topped with fried shallot, cooked shrimp, pork slices and pork lard cube.
The chilli mixture blended quite well with the noodles, and the flavour reminded us of the prawn mee we used to buy from the back alleys back in the old days. A nostalgic bowl of prawn noodles, it was hearty and homey.
Soup version prawn mee $3.0
The broth was light without an overwhelming prawn flavour. If you like rich and robust prawn soup, then this will probably not be the right place for you. The sweetness may be on the mild side and could perhaps be amped up a little. The noodle texture was cooked with the right touch though.
Our verdict, the brisk business is a clear sign that RuiFang has done quite a fair bit of homework before embarking on this business – she definitely has our due respect both for her decision to join the trade as the hawker and the decent bowl of prawn noodles she whips up!
