It’s not very surprising that one of his favorites is the Bak Kut Teh, which he has used in his pork ribs specialty with the best spices for more than 10 hours of marination. I am finding the proper words to describe this preparation – this genius of just using the right flavors to highlight the pork’s deliciousness.
We’ve all tried food that is instantly our favorite – and we just never get sick of them. This is how 15 Stamford by Alvin Leung has made Bak Kut Teh Pork Prime Ribs for me. It’s just filled with the perfect flavor of pork and spices that you would love if you were a meat lover.
My favorite part about experiencing 15 Stamford by Alvin Leung are the open-kitchen moments. You can see the chefs, and sometimes, Chef Alvin himself, preparing the food. I am not the best cook around here, but you know when the food in-the-making is just pure quality and pure class.
There are times when I am a very traditional person. Yeah, we have all these fusion techniques when it comes to treats and sweets. Personally, I still love traditional treats and sweets – sago is one of them. Even gelatine is a personal preference when it comes to desserts sometimes.
At 15 Stamford by Alvin Leung, there is what they call the “Yeung Ji Kam Lu”. This fine dessert is a Coconut Snow preparation with mango, sago and pomelo (S$ 20.00). I like how the first time I tasted this dessert, my taste buds just went crazy. It’s happened to you, right – how you can just taste everything at once and it just goes well altogether?
You can taste the mango and the tenderness of the sago. Such freshness in a spoonful! The dramatic effect when the dessert cup is placed in front of you is not exaggerated and is exactly how it makes you feel.

They have an amazing interior design and arches that would make you feel like a royal. Their dining experience is just amazing because of the leather chairs and the table presentation. I never thought about how warm and comfortable I felt dining here. The thing about fine dining is I always feel uptight and exhausted by the experience. 15 Stamford by Alvin Leung gave me a new light to believe in when it comes to fine dining.
